Grilled Pineapple with Whipped Cream
Serves 4-6

1 whole fresh pineapple, cored and sliced 3/4-inch thick
1/2 cup Malibu rum
1/2 cup light brown sugar
1 teaspoon vanilla

In a small bowl mix together the rum, sugar and vanilla until well dissolved. Set aside.

On a hot grill, grill the pineapple slices basting with the rum mixture.  Turn every 1-2 minutes and continue to baste with the rum mixture until cooked.  About 10 minutes.

Place on serving dishes and top with the whipped cream.


Whipped Cream

1 cup heavy cream
1 teaspoon vanilla
1 tablespoon confectioners sugar

In a medium chilled bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form and serve immediately.
