Grilled Pound Cake with Berries and Whipped Cream – Desserts – Brunch – Recipes

I make this dessert a few times a year and the entire family loves it — it’s so easy and perfect when entertaining guests!

Grilled Pound Cake with Berries and Whipped Cream

Recipe
Serves 4

Ingredients

12 fresh strawberries, sliced
48 fresh blueberries
3 tablespoons sugar
½ cup water
2 cups heavy cream
2 tablespoons powdered sugar
2 teaspoons vanilla extract
1 store bought pound cake
8 teaspoons unsalted butter, softened

Directions

In a medium bowl add the strawberries, blueberries, sugar and water. Stir and chill in the refrigerator for at least 20 minutes.

In a chilled mixing bowl, add the heavy cream, powdered sugar and vanilla and whip until creamy and fluffy.

Heat a grill pan until hot. Slice the pound cake into 8 (1/2-inch) slices and butter each slice and grill on each side for 1-2 minutes until lightly golden brown.

To serve: Place one slice pound cake on serving plate, top with whipped cream and berry mixture then top with another slice of pound cake and more berries and whipped cream.

    Hi Karen-
    I wanted to make one dessert to please a wide range of choosy guests the day after Thanksgiving. I was having a lot of trouble choosing a single dessert, since my guests all liked different flavors & types of desserts. As soon as I saw your photo I knew I had found the ideal recipe! It was perfect since we were already using the grill for dinner. I loved that I could buy the cake & make the strawberries and cream beforehand. For the cream I made a mock Devonshire cream (which I had made recently for English Afternoon scones), which you whip 3 oz cream cheese, 1 tbs. pwd sugar, 1 cup whipping cream, & vanilla. This holds up beautifully made in advance & has a bit more substantial texture than whipped cream (although the guests just thought it was whipped cream). Every guest raved about the cake! Even two guests that normally don’t eat dessert ate it, which was a major coup! I just wanted to thank you for making my dinner a success! Amy
