It’s a beautiful Saturday evening and I’m on my way over to my friend Terry’s dock, here on SML to enjoy this fresh batch of guacamole that I just made. Our husbands will love it!
4 avocados, large dice
3/4 cup grape tomatoes, quartered
1 clove of garlic, minced
3 green onions, sliced
1/4 cup red onion, small dice
juice from 1 fresh lime
1 jalapeno pepper, seeded and diced
1 tablespoon fresh cilantro, chopped
Kosher salt and freshly ground black pepper to taste
In a bowl combine all the ingredients and slightly mash with a fork.
Hint: Leave one of the avocado pits in your mixture to prevent turning brown.
