
This is a quick weeknight dinner that is delicious and easy to prepare. As you may know I like to make batches of tomato sauces on Sundays, store and have ready to use all week long. So this recipe is a snap to get to the dinner table and a nice alternative to a pasta dish.
Polenta with Spicy Sausage Tomato Sauce
Serves 4
Spicy Sausage Tomato Sauce
2 tablespoons of extra virgin olive oil
1 small yellow onion, diced small
2 garlic gloves, minced
2 (28 oz) canned tomatoes (preferably imported Italian variety with basil)
2-3 hot Italian sausage links, removed from casing
Freshly grated black pepper and salt to taste
1/2 teaspoon Italian seasoning
2 teaspoons sugar
¼ cup Italian bread crumbs
¼ cup Parmesan cheese
Parmesan cheese grated for serving
In a large pot, heat the olive oil over medium heat, cook the sausages for 5 minutes (removed from its casings) and crumble while cooking. Add the onion and cook for another for 4-6 minutes, add garlic and sauté for another minute. Add tomatoes, salt, pepper, Italian seasoning, sugar, bread crumbs and Parmesan cheese. Cook on medium heat for 30 minutes stirring occasionally then lower to simmer for another 30-45 minutes.
For the Polenta
You can make dried polenta according to the directions, place in a dish then cut or use pre-maid polenta as I did for this recipe.
Slice pre-maid polenta into ¼-inch slices, set aside. In a large skillet, add 1 teaspoon olive oil and heat over medium heat, fry the polenta slices until lightly browned, 5-6 minutes per side. Lightly season with black pepper.
To Serve
Place the cooked polenta slices on serving dishes, top with spicy sausage tomato sauce and serve.
